American fare; grilled meats, fresh seafood, quality and consistency in a trendy, casual atmosphere.  Dinner only, 150 seats, 160 average daily covers.

Manage, execute and set standards for all BOH activities in support of the dinner service.

Manage, train, develop and the scheduling for a team of 10.  Labor cost.

Menu, recipe planning, costing, new menu development, testing.

Projections for labor, ordering and prep.  Waste reduction.  
Food and small ware ordering, product quality, purchasing budget, food cost and vendor relationships.  Lead monthly inventory accurately and efficiently.
Establish and reinforce standards for kitchen sanitation and cleanliness and ongoing projects.

3+ years of culinary KM management experience.
Prior experience in leading, directing, motivating and developing BOH teams. Plan, organize and direct the work of others effectively.
Ability in meeting and maintaining budget goals.
Serve Safe certification.  5-day, 50-55 hour work week.
